I love Clinkers, they disappeared from the shelves here in NZ for a while but now are back – how much fun are they? Even as an adult I play a wee game where I try to guess the colour and just nibble a bit off the end to see if I am right! I LOVE yellow ones so always have a little stab of disappointment if its green, or worse pink! Yes I am a little weird! ha ha

So imagine my delight when I come across this slice by the lovely Lucy at Bake Play Smile and she has kindly agreed for me to share this recipe with you.

This is a no bake recipe, it  is easier with a food processor to crunch up the biscuits and clinkers, but you could use a bag and a hammer if you needed! So quick and easy to make up this will become one of your go to recipes.

Ingredients
• 2 x 140g packet Pascall Clinkers (It worked out from the 2 packets you can set aside 8 to eat! ;-))
• 1 x 250g packet Malt Biscuits
• 125g butter
• 1 cup condensed milk – 300g (nearly a whole tin – but not quite!)
• 180g block milk chocolate – I used Whittakers Creamy Milk

Method

1.  Line a slice tin with baking paper and set aside.
2.  Crush the clinkers and biscuits in a food processor. I pulsed them a few times to make sure that the clinkers were still a decent size but that most of the biscuits had crushed.

3.  Melt the butter and condensed milk in a large saucepan on low heat until melted and mixed together well, alternatively do this step in the microwave.
4.  Pour the clinkers & biscuits mixture into the butter/condensed milk mixture and combine well

5.  Spoon into the slice tray and press the mixture down very firmly using the back of a large spoon until firmly packed and smooth.

6.  Melt your chocolate in the microwave with 10-20 second bursts, stiring in between until completely melted or you can use a double boiler.

7.  Pour the chocolate onto the slice and using the back of a spoon spread chocolate evenly over the slice.

8.  Place in the fridge for at least two hours (preferably overnight).
9.  Take the slice out of the fridge and leave for 20 minutes before slicing (this way your chocolate will be less likely to crack).
10.  Cut the slice into squares.
11.  This slice will keep in an airtight container in the fridge for up to a week (but lets face it – it won’t last that long anyway!)

It is just as good as you imagine! So quick and simple to make. Clinkers can be found in NZ at some supermarkets and The Warehouse. In other countries just Google Pascall Clinkers to see who your nearest stockist or online supplier is 🙂

  1. Having tried this tonight – this could easily be enjoyed with Eskimos – a classic kiwi lolly/sweet, simply cut them into small pieces, or fruit sticks perhaps 🙂
