I love the look of these! Such simple idea but looks so cool! The kids love them and I think they are so fun to make.
A few years back a friend of mine shared this recipe with me and while I was thinking of fun baking ideas for the kids I remembered these!
You can use any coloured Jelly (Jello) you like – the marshmallows will take on any colour you choose.
Ingredients
1 packet of Jelly (3oz – 85g)
1/2 Cup Cold Tap Water
1 1/2 Cup little mini Marshmallows
Lightly spray an 8 or 9 inch pan square or rectangular pan with non-stick cooking spray and make sure it is spread well up the sides also, the pan I used is 20 x 30cm. I was super light on the spray – only a few light puffs then used my finger tips to spread it around – you don’t want it tasting of cooking oil!
Method
Stir together tap water and jelly crystals in a glass bowl and microwave for 1 minute. Remove bowl and stir well. If necessary, return to microwave for 20 seconds or so to make sure jelly is completely dissolved and stir again.
Add marshmallows and return to microwave for 20-40 seconds or until marshmallows have just begun to puff. This is the key to a successful marshmallow layer! If you over cook the marshmallows, they just dissolve and your roll-up will not have two distinct layers.
Whisk quickly until marshmallows are dissolved.
Pour quickly into prepared pan and chill in fridge for 1 hour or until well set. And this is where the cool bit happens! The marshmallow layer will rise to the top!
Remove the pan from fridge. At this point, the jelly should be very firm and easy to handle. Gently pull one side away from pan and lift entire sheet onto counter. Starting at one end, roll up tightly.
With seam side down, cut into 1/2 inch slices. I find that it is easiest to cut this with some cotton or thread, just put cotton underneath then cross over to slice. The kids loved doing this bit, cutting food with sewing stuff! Also be prepared for it all to be a bit sticky! Mine was quite sticky today – other days not so much – who knows why but its jelly & marshmallows – destined to be a sticky treat!
This needs to remain chilled until you serve.

Is the water boiling water or cold water when you add the jelly crystals, (silly question but you normally make jelly with boiling water)???
Hi, sorry its not clear – you just add normal cold tap water – as you are heating it in the microwave – I remember checking on that too! Will amend recipe 🙂

Hi Emma, yes I think you easily can. On the stovetop heat the jelly as per recipe until it is quite hot but not boiling and until the crystals have just dissolved, should not take long, then add the marshmallows to the jelly and let them heat until they are just starting to puff up – then remove from heat and quickly whisk together and pour into tin. Hi Kim, I use my normal slice pan that is approx 20cm x 30cm. And I prepare the pan by very lightly spraying it with cooking spray. It is such a fun recipe, let me know if you try it out 🙂

My 4 kids have serious food allergies (one suffering from anaphylaxis), and between them are allergic to dairy, egg, bananas and nuts.
